Our master pizzaiolos honor age-old traditions by utilizing a wood-fired oven heated to a blistering 450°C. Our sourdough undergoes a meticulous 48-hour slow fermentation, resulting in a blistered, airy crust that is exceptionally light. By importing fine San Marzano tomatoes, fresh bufala mozzarella, and stone-ground Italian flour, we merge true Mediterranean heritage with the vibrant spirit of Struga.
